Review All you need to spice things up.By Vikk SimmonsIf you enjoy spicy food and like using spices like I do, then you will really enjoy Spice It Up! Anytime I cook, the shelf cupboard opens and packets and jars litter my counter top. I love basil and have grown it a time or two, too. Caraway is another favorite, too. The book lists a variety of spices and adds the herbs that each one can be effectively combined to amp up the spice. I had no idea that North Dakota produces more mustard than any other US state. Good to know spices actually do have health benefits, too. Have to say, there's enough of a variety of spice blends in this book to keep me in the kitchen trying things out for a very long time. I plan to sahre the BBQ Spice Rub with my son-in-law, a confirmed griller. Where have you been all my life?I love to cook and have written several bestselling cookbooks. You already know that spice is the key to an exceptional meal. But if you are like me you know how to create a needed spice as part of the preparation of your main dish. But what do we really know about the spice out side of a recipe. I often look at what I have in the fridge and make something. What I do at this point is deciding what spice to use to guide the meal. Frankly my memory is not quite good to remember the all ingredients of a spice. Occasionally I leave out a very important item and the taste goes to pot. Chef Sarah Spencer must have written this book for me, the handbook to spices. It it's all here.There is a short introduction to spices. Then the major spices are defined. Usually a photo and what it is made of. Often a short history of the spice is included. She then gets into the facts you need to know about spices. Chef Spencer has you throw away any spice over six months old.She shows you how to buy, store and grind your own spices.Then my favorite, an international spices combinations. Using these formulas you can create dishes from countries around the globe. As examples There are seven different spice mixes for Africa each from a different part of the country. Five from Asia including the most important Chinese Five-Spice Blend.Chef Spencer takes you around the globe, with spice mixes for German, French, Italian, Greek and Spanish meals and many more. She hasn't forgotten the US. You learn Down Home Spice Mixes, Cajun Seasoning and Tex-Mex Mexician Mole' Sauce Spice Mix, you remember this it is Chocolate Chili.What do I think of this book? I love it! Very little fluff, just the facts.Recommended!
